Mixed Berry and Banana Loaf - in association with Anchor

I was recently sent some lovely Anchor Kitchenware and invited to bake a recipe using Anchor butter to show off the Anchor Kitchenware.

I decided to use up some over-ripe bananas that were in the fruit bowl along with some mixed berries that I had in the freezer.  The result was a Mixed Berry and Banana Loaf which was delicious and devoured in record time by my family.

Mixed Berry and Banana Loaf

265g self raising flour
40g plain flour
140g firmly packed light soft brown sugar
200g mashed overripe banana, 2 large bananas
125ml milk, I used semi-skimmed
2 free range eggs
50g butter, melted and cooled
2 tsp vanilla essence
250g berries, any kind frozen or fresh

Preheat oven to 180°C. Line a 20 x 10cm (base measurement) loaf tin with non-stick baking paper.

Put both flours into a large bowl. Stir in the sugar. Combine the banana, milk, eggs, butter and vanilla in a medium bowl and beat to combine.

Add the mashed banana mixture and berries to the flour mixture and stir until just combined being careful not to break up the berries if using fresh ones. 



Spoon the mixture into the prepared loaf tin and smooth the surface. Bake in the preheated oven, covering with foil if necessary to prevent the top becoming overcooked, for 50-55 minutes or until a skewer inserted into the centre comes out clean.

Set aside in the pan for 5 minutes to cool before turning onto a wire rack to cool completely. Cut into slices and serve either on its own or spread with butter.



Store the loaf in an airtight container, away from direct sunlight, for up to 3 days or wrap well and freeze for up to 1 month.
